a) Educational aims: In line with the educational objectives of the degree course 'Mountain Sciences' teaching is to encourage the sustainably management of quality livestock products in mountain and mediterranean environments. b) Expected results At the end students will be able to: - Know and discuss the parameters that define the overall quality of animal products; - Acquire knowledge in the field of farming systems in mountain area; - Enhance the traditional products; c) Program Concept of total quality: bromatological-chemical, nutritional, technological, organoleptic, health and hygiene of animal products. Farming systems in mountain areas: monogastric and ruminant. Traditional products of animal origin in the mountain area. Relationships between management, environment and quality of animal products. Promotion of traditional products: short chain, relationship with the territory. Legislation.
