(objectives)
A) AIMS OF THE COURSE According to the aims of the Master Course, the programme of the course “Qualità dei prodotti d’origine animale” (Quality of Animal Food Product-s) is aimed at introducing the complex legal scenario regarding the quality (related to organoleptic, technological and safety issues) of animal food products and the chemical, physical and bio-technologcal investigation strategies and methodologies allowing for a true appraisal of the total quality of animal food products.
B) LEARNING RESULTS Trough the lessons, exercitations, didactic visits and/or teaching materials, students should achieve the following learning results that will be matter of the practical and final (oral) exams: - knowledge and understanding, also applied, of the main topics and key-points of the quality and safety of food of animal origin; - ability to judge as far as the application of legal rules, technologies and organizational approaches toward the quality and safety of animal foods; - communication skills (efficacy and trueness) about the topics of the course; - development of a fair learning skill related to the continuous evolving scenario (regulatory, technological, scientific) regarding the quality and safety if animal food products.

As for the theme of the “Quality of animal food products”, the programme is organized aroud the following points: - evolution of the concept of quality in the aro-food sector; - intrinsic quality (bromatological, nutritional, organoleptic, technological and safety-related); - extrinsic quality (animal welfare, environmental impact of livestock farming and industry) of animal food product; - methodologies and analytical procedures for the quality assessment of animal food products; - control and auto-control in animal food production chains; - genetic, nutritional and other environmental factors affecting the quality of animal food products; - study cases relevant for the main animal food production chains (e.g., meat, dairy, eggs, hive products); - EU and national legal framework related to the quality of agro-food products with the food of animal origin as a special case.
