As for the theme of the “Quality and the certification of animal food products”, the programme is organized aroud the following points: - evolution of the concept of quality for the animal food products; - intrinsic quality (bromatological, nutritional, organoleptic, technological and safety-related); - extrinsic quality (animal welfare, environmental impact of livestock farming and industry) of animal food product; - relevant issues and study cases for the main animal food products: eggs, meat, milk and dairy products, seafoods, hive products and insects for feed/food;
