(syllabus)
The course is organized in two parts. In the first part, the different families of natural products (secondary metabolites) are studied based on their biogenetic precursors. In particular, secondary metabolites deriving from the acetate pathway, the shikimate pathway and the mevalonate pathway are studied. For each family of compounds, structural aspects, properties, biological activities and applications in the agronomic, food, cosmetic, pharmaceutical and nutraceutical fields are examined. Among the various classes of compounds, phenolic compounds are of particular interest and among the activities, the antioxidant property. The techniques of extraction, purification and structural characterization are also studied. In the second part of the course, students present in the classroom, through a power point of about 20 minutes, a topic concerning natural products based on the in-depth study of a scientific article in English selected and assigned by the teacher. During the course, seminars will be held by experts on topics related to the program. In addition, exercises and/or didactic visits are foreseen.
