b) Program: Part - Typical and quality products of mountain areas. Concept of total quality: bromatological-chemical, nutritional, technological, organoleptic, health and hygiene of animal products. Farming systems in mountain areas: monogastric and ruminant. Traditional products of animal origin in the mountain area. Relationships between management, environment and quality of animal products. Promotion of traditional products: short chain, relationship with the territory. Legislation.
